Salmon Croquettes

A repost from the Witch’s Kitchen blog, which will soon go away.

These were delicious served over salad greens with a red wine vinaigrette. Serves 2 as a main dish salad.

2 pouches pink salmon (6oz.) – I used the new tear open pouch canned salmon – very convenient!
8 Town House crackers – you could also use Saltines
salt, pepper, cayenne pepper to taste
lemon juice

Crush the crackers in a bowl, add the salmon and blend well. Add salt and pepper, a sprinkling of cayenne, and a few tablespoons of lemon juice. Mix everything together. If it’s too dry to form into balls, add a little more lemon juice to hold everything together.

Roll the mixture into 6 balls; flatten the balls into little patties. Add patties to a very hot, lightly oiled pan. Cook under browned on each side and heated through.

Next time, I might try these with cornmeal instead of crushed crackers, and add some corn kernels.
