We have a weekly organic fruit and veggie delivery here. Sometimes, if we’ve been out a lot, I end up with a backlog of vegetables I need to get rid of quickly. This is how I do it.
Chop up your veggies and microwave or saute them to soften, if they’re hard like broccoli, carrots, or onions. Mix the veggies with a few eggs, however many it takes to generously cover the vegetables. For 3 heads of broccoli, I use 6 eggs. Add salt and pepper to taste, and shredded cheese. Whatever kind goes best with your vegetables.
Pour everything into a greased casserole dish and bake at 400 for about 45 minutes, or until a knife inserted into the center comes out clean.
This is definitely one of those wing it recipes. My husband calls things like this “Kim Surprise” because the outcome is always a surprise.
